I use this air jack with jack stands and a set of ramps

Yep, a "custom" two tier ramp for clearance. Like the air jack , will it work on the center jack points ?

My wife wants to get me a cordless wrench set for Christmas.

If I'm not disassembling the car here at home, do I really need a 1/4" impact driver that hits somewhere over 650 ft-lbs? Or could I get away with a wrench with a hex chuck and 1600-ish in-lbs (which I think is around 150 ft-lbs)?

If I understand well your question
These are different tools, not for same job.
Impact driver did not torque at the torque you want.

I guess my question really is, we saw a two-tool kit with a drill and impact driver. Basically, the one in the middle (not highlighted) and the one on the left (circled) in your photo.

What I'd like to know is, between the two I've highlighted, is the driver on the left good enough for doing car work like lug nuts, or should I use the heavier-duty one on the right?

It is a impact driver for wood screw, not strong enough for wheels nut. And you can't fit socket. just screw bits.
I have a kit like that , Ridgid

The one on the left is not strong enough for wheel lug nuts but is very useful around the house, it's small and light. I think that Makita makes a smaller 1/2" drive. The 1/2" drive (on the right) is good for lug nuts, it's 740 Ft-Lbs. but heavy.

I bought a good 350 lbs impact driver with cable for $75 cnd special sale.

Work great for wheel nut.

Battery impact wrench are very expensive ; here a 325 lbs
