I ask Honda when I dropped by to question why the alarm didn't go off...

They said the airbags is worth $1,500 CAN.

They just pryde it until it opened. It seems like no one wanted to investigate this.
The door handle or the door itself? If the door itself the thieves had a "jaws of life" type device - the force to defeat the latch is better than 5,000 lbs (50G).
Airbags are the dopers new catalytic converter money source, $500 for 5 minutes "work" and you don't have to crawl under the car!

Americans are a strange bunch.

The question is why only Honda airbags. Aren't all cars airbags worth about the same?

OP is Canadian. And the airbags resell to shady repair shops for cheaper so they can charge full price to insurance. Everyone makes money and insurance companies lose it.

I understand that the thieves want to resell the airbags, but why mostly Honda? Since the ones they are stealing are not on the Takata recall list what's the added value? Wouldn't it be just as lucrative to grab Toyota or Ford airbags? Or is there something about the design of the Honda airbag that makes it easier to steal?

The "added value" is that they are GOOD airbags and the "shady installer" avoids "embarrassment" of having a "hot" replacement bag recalled - likely a federal offense.

Breaking & entering a car, and stealing the airbag, and accepting stolen goods, while crimes are NOT Federal offences - installing a recalled airbag, in the USA, is.
