Long story short, I traded my MT sport for a CVT ex hatch. I haven’t had an automatic transmission for YEARS...

My question is, is it safe for the cvt to shift from “D” to “S” or “L” while in motion? Or should I wait until I’m at a complete stop?

It's fine. It's not physically different gears. Its just a different programmed strategy for the CVT. Holds higher RPM and more engine braking by adjusting the way it moves the cones versus driving in D

Also for S gear, does paddle shifter need to be used?

I think paddle is only on the sport and sport touring trims.

No, you don't need to use the paddle shifters.

In S the car will drive similar to driving in D, but the CVT will maintain a higher RPM range to stay in the horsepower and will use engine braking more when off the throttle.

If you use the paddle shifters, the CVT will begin using pre-determined "gears" to simulate a 7-speed transmission. It will keep using these "gears" until you shift back to D, or I believe you can hold the upshift paddle for like 3 or 5 seconds to cancel Manual mode.
