Rooted head unit gives access to vehicle data?

The HU is just a locked down Android tablet. I haven't tried rooting it like others have. Wondering if anyone knows if jacking the HU can give access to vehicle data like speed and tach. Do any of the tuner apps from professional kit developers show this kind of data on the HU?
