New tire/wheel combo on '16 EX=T sedan

For my 2016 EX-T sedan, I'd like to use my OEM 17" wheels for winter rubber here in Canada, and put 18" wheels on for summer use.
I really like the look of the AVID AV06's (and that style from other manufacturers), and I think I like their "hyperblack" colour - I have yet to see it in person though, I'm just not into true black wheels.
The AV06 is available in a:

18 x 8 @ 35mm or 42mm offset
18 x 8.5 @ 35mm or 45mm offset
18 x 9.5 @ 24mm or 38mm offset

Can I use 245/40r18 rubber on stock suspension on the 8.5" wide ones @ 35mm offset or on the 9.5" wide ones @ 38mm offset without brake and suspension issues or rubbing? Which would be better suited?
(or should I consider 235 width rubber on any of these wheels?)

Also, regarding hubcentric rings to make the centerbore match up, do they stay on the wheel upon removal or do the stick to the hub?
