I’ve started to do mine. I’m in the process of changing all the cloth pieces (door armrests, door panels, and 3 center console pieces).

So far, the door armrests were a bit tricky. Cut needs to be made during the process of mounting due to many plastic clips that stick out. All the material I’ve mounted thus far has been wrapped over the stock cloth for extra padding.
I used clothes pins to hold down the material and gorilla glue to mount it onto the underside.

The 2 long center console pieces were a bit harder due to not being able to use that same clothing pin technique, just had to slowly mount and make sure the material was staying tight.

For the center console, I tried at it for an hour and eventually gave up. The awkward curvatures and angles as well as the plastic that sticks up on its underside makes it a nightmare to deal with. I decided I’m just going to leave that one for a professional.

For the door panels, it seems from the factory Honda decided only half of the things on the door panels should be mounted by screws and the rest should just have melted plastic clips. So I’m still in the process of thinking about if I should break off the plastic clips to get the panel out or try tucking the material.
that sounds like a lot. I was thinking more along the lines of swapping with a Type R c or Insight piece

I believe they make a leather trim of the Civic Hatch Touring. You can try and find some pricing on those pieces.
When I get home I’ll post an eBay link. For 30 plus 20 shipping I got a leather cover for the console and surrounds that actually turned out nice. I haven’t mounted it yet but the quality is pretty good!

The easiest and best way is to go with OEM from an EX with leather, but it’s not as cheap as eBay. (10x the cost?)
Following is for the coupe (you didn’t say which you had)
Door armrests are $25 ea. (83502-TBG-A51ZA , 83552-TBG-A51ZA) Center console $125 (83441-TBA-A01ZA) center sides $49 ea (83411-TBA-A11ZA , 83416-TBA-A11ZA)
On the other hand compared to the bay covers the install is fairly easy. Just need plastic pry tools.

I got the doors soon after I got the car and held off because of the expense. (It’s crazy you have to buy the whole center armrest mechanism and can’t just purchase the cover) Finally couldn’t stand it and I was just about to order the center when I found all 3 pieces on eBay for $125. You might try there or contact a salvage place. Now that they’ve been out for a while they’re more common.

FYI, Here’s where I got my door armrests:

And what I was going to get for the center console:
