No that should be fine, for performance purposes a slight stretch is actually preferable (wheel slightly wider than tread width of tire). It preloads the sidewall giving you better turn in and puts more of the tread in contact with the road.

235 is more of a loose estimate of width, the actual width varies from tire to tire. You need to look at the tread width of the tire actual tire you want to buy vs the rim width. But yes, seeing as stock is 215 on a 7" rim, 235 is perfect for 8" rim. I wouldn't go any narrower.
