I have never used Vroom, but some members of a car club I'm in have had bad experiences including delays, incorrect paperwork, and problems with the cars themselves.

Your kids will fit well into a CTR, no problems. I am 6'2" and have a 12 year old that sits behind me, in a carseat, in that car and we each have ample leg room.
The CTR will retain value much better than the 2.0t.

Yes, BMW and Mazda have had the tech on manual cars for at least a couple years. The engine may stall if the clutch pedal is not depressed, but it will stop your car if it so chooses.
