Do you have any photos showing the dried coolant that might perhaps help indicate where the leak is coming from? If there's staining from when the rad hose clamp was loose, you might try to clean that all off so that you have a clean canvas to spot the leak from.

Did you install the shifter and bushings at the same time or had the shifter been installed previously? If the shifter was already installed and you just installed the bushings recently, it sounds like the cable bushing for the gate cable (the smaller bushing) may be upside down and causing it...

It is possible when using a throttle spacer to push the pedal far past 100% throttle input. I recommend putting the throttle % display on the dash (with the engine off and the car in accessory mode) and slowly depressing the throttle while watching the dashboard. You'll see the throttle % hits...
