I went to dealer to do oil change and tire rotation.
After that, I feel there is more noise when I drive, it feels like engine. Is that normal ?

First, I would check the oil level on the engine, and right now.
Second, try to determine what exactly you are hearing.
They might not have correctly reinstalled the aluminum cover pan under the engine.
You could always take it back to the dealer, and discuss your concerns.

It could also be the tires. When my GF recently had her tires rotated, the cabin noise got louder.

They may also have 'checked' your air filter. Make sure it's closed securely.

Agree with everyone above. I'd just take a good peek under the hood to make sure nothing seems amiss.

Why would they remove the oil pan in an oil change?

Not the oil pan. The entire bottom of the car is covered. There are access panels that allow you to change the oil and other things that are screwed in with quick release screws. If these are not tightened correctly, it may cause the panel to rattle.
