What kind of area was it, was there residential houses or commercial businesses anywhere? Any possible witnesses? Any possible cameras? If there is even the slightest chance, I'd go door to door knocking to ask.
It was off and parked outside of my work while I was inside. Went to go leave and couldn’t get in. Smelled something burnt and my windows were all smoked up. Called Honda roadside, then they called the fire department and managed to get the passenger door open and it was just destroyed. Dealership is like “that’s insurance” and I’m like “no that’s a warranty issue”. Car is bone stock, no electronics in the car, no smoking/vaping stuff. My car decided it wanted to catch on fire. Luckily the windows were up so the fire was smothered because it ran out of oxygen.

Sorry. That isn't a Warranty. It definitely is Insurance. The inside of a vehicle isn't "air tight" - if it were truly burning, it would have continued to burn. Now, if the vehicle were in operation, then it would be highly likely a warranty. However, the vehicle accessory/ignition was off - so, could not be a defect with manufacturing.
There may have been enough glare through the windshield that may have acted as a magnifying glass and been the culprit in this matter?

Heat rises. Do you see the connectors and the wiring harness that fell south and are pretty much intact? The fire appears to be originated in the switch and once that melts away, the connectors/wiring fell down and out of the climbing heat so they are still pretty much recognizable.

You need to contact Honda Corporate on this one also, just to be sure.
