I'm wanting to wrap the roof of my car would like suggestions of what brands are better to use.
And what the best way to make the cuts without using a knife?

I've never wrapped a roof but have used vinyl quite a bit. I like 3M 1080 personally. As far as making cuts, knifeless tape is the way to go.

I did mine with Avery Dennison. Its a dry install and was not very hard. took about 3 hrs due to the removing the shark fin mostly.

I used a razor for the cuts but all except the back window are covered by trim.

I previously wrapped a vehicle in 3M and it turned out great, I started with Vvivid(because its cheap) and didn't like that the backing glue would pull from the vinyl when needing to reposition it so I switched to 3M and had no issues. I also hear good about Avery products. So, to narrow it down for you I'd go with 3M or Avery. Use an xacto knife or surgeon scalpel for precise cuts.

Dry install is exactly how it sounds, you don't install the vinyl with water/soap like you would with other applications like decals or paint protection film.
