I hear you. I am looking for an EX-L w/Sensing and they are hard to come by. There are none within 200 miles of me in the color I am looking for. One dealer suggests he can find one and have it delivered within 4 days, another dealer says I have to order from the factory and wait 2 months for it.
Of course I think they should just give me the Touring they have on the lot at the EX-L price. haha
There are LX trim Civics all over the place though.

To get my WOP EX-T with black interior, my dealer had to trade with another dealer since they had none in stock. Hopefully you will get yours soon.

When I started shopping for my Civic, I was looking at the EX-L Sensing first. The first dealer I went to said that only 4% of 2016 Civics built will be EX-L. I don't know how accurate that is but they certainly are hard to find. I ended up going with the Touring.

I'm looking to also buy a white with black. Was told I could not get an EX-L with sensing and to just get a touring. Debating if I should just get an EX-T with sensing instead. How do you like the touring?
