What to Use to Build Interior Structures?

So I'm going to build a dog bed/shelf in the back seat ('20 Type R, it has the cup holders in the back seat middle) and am wondering what material to build this out of. It will cover the cup holders (and be anchored in them) and extend forward to the center arm rest. I wondering what material folks think I should build this out of. It will go under a dog blanket so I'm not too worried about finish, but I do want nice enough. Should be easy to work with and shape/cut. But also durable enough.

I'm thinking something like closed cell foam as anchors in the cup holders and then 3/16" thick plastic as the deck/shelf and perhaps for some sort of vertical stiffeners/legs. But it seems like there should be something better than that?
