Back with yet another update. Removed the rear crash bar (still running the front for now but may look into a lighter bar) and removed a few odds and ends from the engine bay. From the engine bay I've removed the battery tray and factory tie down and instead have been using the boomba tie down, removed some plastic AC/Radiator shroud pieces? I believe they were used to direct air to the radiator/AC Condenser but I just took em out to free up some space to work, and removed the rear faux vent covers on the rear. I also removed the factory seatbelt assemblies, seatbelt clicking mechanism thing can't remember the name, and have been running a 4 point harness instead.
The rear crash bar was roughly ~13-14 pounds so with all the other odds and ends probably near ~17 pound weight savings. The harness weighs slightly less than the seatbelt assemblies but I didn't get the exact numbers. I plan on running a rear roll bar and welding it in so that'll add some weight back. I'm using the rear seat mounts to keep the harness planted for now until then.
I still have yet to weigh the car because I've been procrastinating. I would imagine it's much much lighter than stock. I also found out that my splitter weighs a ton! The front bumper with it removed is light as a feather. It looks like garbage without the splitter and it's actually functional at high speeds so it will stay.
Here's a picture of the car with some of those pieces removed and the most updated engine bay picture.
