Single Map has three Maps

So I opened a single map file, and it still had choices for three maps. Will it always show choices for switching to three maps even if the file is a "single map"?

If you are referring to the "Starter" maps, yes.

Those maps marked Tune 1, 2 and 3 allow you to have 3 different boosts levels and some different driveability tweaks and are switchable using the cruise control buttons.

If you want to keep it simple, just adjust Tune 1 only and don't touch the others (if you don't plan on using otf map switching).
