That's a pretty comprehensive guide, nice one.

Apart from topping up coolant, is bleeding the cooling system necessary? If so, how do we bleed it properly?

Thanks for the question and sorry for any delay in getting back! We do recommend bleeding the system after install, and normal bleeding procedure works fine for that. In most cases, heat cycling the car by allowing it to warm up, push the air to the top of the system naturally, and topping off the coolant level a few times until it stabilizes will usually be the simplest method. If you have access, a shop may be able to pressure-bleed the system with a tool as well.

Since this taps in after the heater core does this require you to have the heater running for the coolant to travel through it?

in the instructions number 20 and 21 seems to be confusing. does it cool before or after the heater core?

Awesome. As soon as you're able, please go and test this setup (your oil cooler and your radiator setup) at a local track. Take a video of a whole 20 minute session on a 90-100 F day with the oil and water temperature overlaid on the video. Then we can see your lap times along with the temperature to see that it works, even when you're putting down good times (and not coasting).
