I have a 2019 Civic Coupe lx. I believe the stock setup is: 16x7 and 215/55r16. I've been trying to research to find the best looking setup for stock suspension and just need some help. I'm looking for a fairly flush fitment with less wheel gap than stock without any rubbing. I ended up with this: 18x8.5 +38 and 245/40zr18.

18x8.5 +35 will give you dead flush. +38 is close to flush.
245/40R18 is 1.6% bigger than the oem tire and will only close the fender gap by 5mm, not really any significant difference.
But you will be very safe to run 18x8.5 +38 wrap with 245/40R18 on stock suspension.
If given a choice for me, I will go with +35 for a perfect ‘royal’ flush, wrap with 235/40R18 to maintain the speedometer error and drop 1” with lowering spring to give a better stance look. This will reduce body roll, front dive-in when braking and a nice stance look significantly.
