Had a bit of a run in yesterday being forced to take a side street. Didn't quite expect to be driving through some wet roads which ended up causing some splatter from either mud or concrete layering the wheel well. Did scrub a bit of it off earlier with just water and a microfiber towel but looks like there's still quite an amount of residue let alone some still some in some smaller spaces. I did attempt taking it into a touchless wash to see if the floor mounted sprays could get at them but doesn't seem like it worked or completely missed it. Anyone happen to have any suggestions/recommendations in terms of trying to get rid of it?

I'd start with car wash soap and something to scrub with, like a brush or cash wash sponge. You don't have to worry about being gentle in the wheel well.

Sounds good, will need to look into that. Bit hard to get into the rear wheel wells without considering taking out the wheels. Considered spraying it down with a hose but looks to be fairly caked on there pretty well. Managed to clean off a bit more on the front side, still quite a few places I can't get to but for the most part, most of it is off. Planning to run it through the car wash again and see if that can take out some more gradually.

I would not count on the drive through car wash helping much, as the wheels are blocking most of it's access. Instead of a sponge you may want to look into a long-ish handled brush that you can get in there.

After we wash and scrub...do we need to dry and apply something after? I have seen WD40 being used on youtube but there wheel well surface looks smooth where my Hatch has a grainy type surface that I couldn't imagine putting something like WD40.

....or I really need to get in a give that a scrub ?!?

I'd probably say to scrub it down, the concrete/mud mix can get pretty caked on there. Only realised that I had a bit more caked on the underside of the rear bumper that i had to carefully wipe down. It can come off, but because of the rear wheel well, it'll require a bit more effort vs the front. If you happen to have a hose (ended up picking up a water pump to try out), it might work a bit better to scrub it down while spraying the areas
