The ECU controls the alternator for better fuel efficiency and longevity of the battery based on driving conditions and the condition of the battery, hence the need for the battery sensor. Unplugging it will most probably make the ECU charge 14.0-14.4 constantly and will also trigger a CEL (P1550 or similar).

Keeping the headlights on also keeps the charge voltage to 14.3+
