I know there are several threads on CarPlay Issues, but the most successful procedure I've found is to always unlock my phone before connecting the cable. Since starting that several weeks ago, I have not had a single connection failure, whether starting the car after plugging in the phone or waiting for the head unit to boot up first. As long as my phone is unlocked, it connects every time.
