will this setup work with no rubbing, etc on a 2019 hatch sport on stock suspension

I had 17x8 ET45 235/45 and had zero issues. But I own 4 door

I think you should be okay, considering is 5mm shorter than the 2020 Hatch Sport stock 18 wheels. I'm toying with wheel fitments and looking around before I do what I have in mind which is:

17x9(or 9.5) with offset between +25 to +38
Tire size is going to be 245/45/17

Suspension set up is going to be Buddy Club Sport Coilovers (lowering about 1.5 inches), just trying to figure out what camber arms to get.

100% absolutely will work perfectly.

Matter of fact, 235/45-17 is the OEM size of euro Civic hatchbacks as seen in this screenshot from Honda's UK site:
