There are many reasons that most performance cars have only 2 doors. Other than a far superior appearance, weight and body rigidity are two. If you want 5 doors, buy a minivan.

Why do they build hot hatches then? For really quick grocery runs?

They might be the minority, but plenty of 4 and 5 door performance cars out there. High-end sports sedans come to mind (M3, C63, RS4, IS-F), as well as the super fast wagons (CTS-V, RS4 Avant)
