I turned rev matching off as soon as I could. Only turned it on once for my dad so he could see what it does, otherwise it's been off. I mostly use Comfort mode because I just assume it's better on gas, only switching to +R when I actually want to drive. I never use Sport.

Yes. Specifically with iOS (probably Android too), if you give an app microphone permission it can "listen" while the app is backgrounded. But you can completely revoke an app's microphone access in Settings.

I've had a lot of different vehicles, but the last sporty street car I had was a 2016 Miata Club. I'll just paste what I said about it earlier in another thread.
The tire sidewall is effectively part of the car's suspension. It's sprung for the OEM tire size, so to maintain the same ride you would have to change other parts of the suspension or else car will be softer. It won't hurt anything to just put smaller wheels on though.
Seems like an 18 would soften the car up significantly, which would be a dealbreaker for me. Can anyone say if it makes a big different? Even with track focused tires, the ride on a Boxster I owned changed significantly when going from a 17" to an 18" and back.
