For an oil temperature gauge I have done the same as you by putting a sensor in an oil drain plug. That seems to work very well for the oil T.

The pressure will depend on wheel width and tires (track, suspension, driver preference, and other variables to a smaller degree).
I’m running 18x9.5 Moreno rims with Goodyear 3R's (275/35R18 square) with about 2.7 camber up front. The ideal pressures for me in this set up

I agree with Dave B. Shannon like is a nice starter track with lots of spots for overrun.
Mosport on the other hand… I actually don’t plan on trying that one on until I get a few more years experience under my belt. Just not worth the risk for me at this stage anyway.
