It would have some stretch on it right or does it fit perfectly, don't want an extreme
It depends on the brand of the tire since different manufacturers have different side wall shape. But a 255 for a 9.5 will definitely be fine and not be overstretched compared to a 245.

I'm looking to get 18x8.5+42 wheels, would 245/40 fit without rubbing? Or should I just go with 235/40.

Go with 235/40
I see you recommend the 235/40 over the 245/40. On stock hatch suspension, is the 245 a definite rub? I have been asking this question in all the threads and it seems 60/40 with the majority saying the 245/40 will work. Sorry to beat a dead horse!

In my case, the wheel is a 18x8.5" +35 VMR701, and again, stock hatch suspension.

I would go 245/40 on the 8.5 +35 stock ride height. If you ever rubbed it would only be lock to lock with 4 fat people in the car on a big bump. 235/40 is a safe bet if you were lowered.
